Recipe of the Scones

This article would be written in English because I have learn this recipe during my humanitarian mission in Ireland. You can follow my adventure during this great humanitarian mission in Cheeverstown House in the article called "Trois mois de Mission Humanitaire" which is going to be written in french. In this article I give you the recipe of one of the greatest food surprise I have tasted: the Scones.

How long it takes: Around 20 minutes for 6 - 8 scones.

For this recipe you will need:

  • 8 oz. Flour Self-Rising

  • Vanilla Extract

  • 2 oz. Butter

  • 1 oz. Custard Sugar

  • 1 ordinary egg or 2 small eggs

  • 150 ml milk

  1. Then put in the oven turned at 220°C for 12 minutes.

  2. With the rest of the milk-egg(s) mix, brush it on to give colours to the scones.

  3. With a pastured caters put in flour to do not get stick each time: make 6 to 8 scones.

  4. For the last steps: Bring it together then put it on a flour surface (not rolling it!). Get ½ an inch thick.

  5. Add cherries (or whatever you prefer: chocolate, dried grapes).

  6. Do with a palate knife to keep it cold to mix 50 ml of the Milk-Egg(s) mix: just enough milk to make it a ball. (using a palate knife is better than using your hands which are already warm and would make it sticky).

  7. Then you have to get about a 100 ml of cold milk and mix with an ordinary egg or two small eggs: bit in the milk and get lots of bubbles.

  8. 1 oz. of custard sugar, mix it and keep light and nice. Then add 1 drop of vanilla extract, mix that around.

  9. Keep very light (we want lots of air in the flour), finger tips to squash the butter: make it as little plates lets, broke the butter in small pieces.

  10. Then put 2 oz. of butter cold for the fridge (it won’t get sticky as if it was with soft butter), chopped in cubes.

  11. Let's bake it! To start take a bowl and put 8oz. of flour self-rising sifted and a tea spoon of baking powder sifted, mix them and make it light.
